- 1 ripe avocado
- 1 cup dates soaked for 1 hour in warm water, drained
- 1 cup cashews soaked for 1 hour in warm water, drained
- 1 tbsp coconut oil cold pressed, unrefined
- 1/2 cup raw cacao powder
- 3 tbsp plant-based, quality protein powder optional
- 1 tsp Vanilla Extract
- turmeric powder and sea salt for dusting

- Place the avocado and dates in a food processor and blend until creamy. Add cashews and coconut oil. Process. Can leave nuts a little chunky or blend smooth. Add remaining ingredients and process until a sticky dough forms. Transfer dough to a parchment lined loaf pan or 8 by 8 square dish. Press into the pan firmly. Sprinkle turmeric and sea salt over and place in freezer for 4-6 hours ... if you can wait that long! Remove and cut into individual bars. Store in fridge or freezer. ENJOY!
